Tequila

Tequila regions

Tequila is currently produced in the territory protected by the Appellation of Origin, which includes all of Jalisco and some counties in the states of Guanajuato, Michoacán, Nayarit and Tamaulipas. Tequila is the only beverage in the world carrying the Appellation of Origin for which the raw material takes seven to nine years to be cultivated.

Jalisco Lowland Tequilas
Come from volcanic soil which produces smaller Agaves. Lowland tequilas tend to be more herbaceous, Oaky & robust.

Jalisco Highland Tequilas
Come from higher elevations, the soil produces a larger Agave. Highland tequilas show more spicy & fruity notes.

Tamaulipas Tequilas
This Eastern state borders Texas and the Gulf of Mexico. The agaves produce tequilas with earthy aromas and solid fruit and floral notes.

Single Village Mezcal
All tequila is mezcal but not all mezcal is tequila. These play by a different set of rules. Often smoky and made with different types of agaves.
